Sandwich with herring

with melting egg, avocado and kale

  • 2 big herring fillets a'la matjas Lisner
  • 2 eggs
  • 2 slices of sourdough wheat bread
  • 1 ripe avocado
  • 100g of kale
  • 50g of butter (25g for frying the kale and 25g for buttering bread)
  • salt and pepper to taste

Method of preparation

  1. Before preparing the recipe, soak the herring in cold water, preferably for about 2 hours. Change the water three times during this time, then rinse them thoroughly. If you prefer your herring to have a more salty taste, skip this point.
  2. Fry the kale in a frying pan with 25g butter, season with salt and pepper.
  3. Slice the avocado.
  4. Fry eggs.
  5. If you like crusty bread, we recommend heating the bread in a toaster or frying pan until browned.
  6. Butter the bread, then arrange the kale, avocado, herring and a fried egg.
  7. Decorate with freshly ground pepper and salt.
